Sweet and sour lemon pie with lightly whipped cream
Sweet and Sour Lemon Pie
Pie dough
3 dl flour
1 dl sugar
1 pinch of salt
1/2 tsp baking powder
175 g melted butter
Filling
2 eggs
2 dl sugar
1 tbsp grated lemon zest 3 tbsp lemon juice
1/2 tsp baking powder
1 pinch of salt
Instructions
Preheat the oven to 175 degrees.
Start with the pie crust. Melt the butter in a saucepan while mixing the remaining ingredients in a bowl.
Pour in the butter and stir together into a smooth dough.
Press the dough into any mold and then let stand for a while in the fridge.
When the skin is cool, pre-bake it for 10 minutes. In the meantime, make the filling.
Whisk eggs and sugar until fluffy.
Add the remaining ingredients to the filling.
Pour the batter over the hot pie crust and bake for another 20 minutes.
Allow to cool, then dust with icing sugar.
Serve with lightly whipped cream.
